Picnic in the Park for Two

Today I’m sharing an easy gluten free snack that takes less than 15 minutes! It’s perfect for when you need to fuel your appetite quickly.

It also only requires 6 items (plus water) so it’s an easy shopping trip.

First you will need Epicure’s Falafel mix. If you don’t know where to purchase products – contact Kathy who will get you started with must-have pantry staples you will fall in love with.

Once you have your falafel mix, all you need to do is add juice of one lemon and 1/2 a cup of water! Mix ingredients and place 1 heaping tbsp x 12 on a greased baking sheet. Bake for 10 minutes in preheated oven at 400°.

While your falafels are baking in the oven, take out a few Okanagan Rawsome Beet Crisps and some Spread’Em Kitchen Co Cashew Spread. Generously slather those crisps with creamy tumeric richness. Add some sliced cucumber, sliced falafels and top with your favorite microgreens.

Since we were headed to the park, we packed all ingredients with us to make there instead. While my daughter chased after the planes in the sky, I prepared our nutritious snack to keep her going.
