
Hello 2017 Holiday Potlucks!
I’ll be here over the next few weeks posting my easy go-to recipes for those needing fun, festive items to bring to a holiday potluck. Let me introduce you to this easy, crowd pleasing, Christmas inspired brie.
This week, I attended a corporate potluck party that consisted of decorating, boozy nutmylk drinks and of course holiday snacks. My contribution: This holiday inspired ooey-gooey, Christmas colored brie. Did I mention you can prep this the day before. All you need is a microwave to reheat in the next day.
Pomegranate and Cranberry Brie
Shopping List
- Wheel of brie (I used a larger Costco sized one)
- 1 cup frozen cranberries
- 1/4 cup water
- 1 tsp ground cloves
- 1 tsp ground nutmeg
- 1 tsp ground cardamon
- 1 tsp ground cinnamon
- 2 tbsp coconut sugar + 1/8 cup coconut sugar
- Pomegranate seeds
- Rosemary sprigs, cut in 3″-4″ pieces
Prep: Cranberry Glaze
- Combine frozen berries and 1/4 water in small skillet. Warm over medium heat.
- Stir occasionally. As sauce thickens to desired consistency, add spices and 2 tbsp coconut sugar. Reduce heat to simmer and thicken sauce.
Prep: Sugared Rosemary Garnish
- Pour about 1/8 cup coconut sugar on small plate
- Take pre-cut rosemary sprigs and wet, shake off excess water
- Roll rosemary sprigs in coconut sugar, set aside and repeat
Pomegranate and Cranberry Brie
- Place wheel of brie on microwave friendly serving plate. Heat in oven for about 90 seconds (until the top is soft).
- Top with warm cranberry glaze (re-heat if made in advance).
- Garnish with pomegranate seeds and sugared rosemary.
- Serve with your favorite crisps and holiday boozy nutmylk!
