What does January Mean to you?

January brings the start of two things I look forward too – 1. Red Carpet Fashion and Award Season, and 2. Super Bowl Party Entertaining. Yes darlings I know – the Super Bowl is in February, but really the food and party planning comes a few weeks before.

Today I’m sharing Pulled Jackfruit Sliders with a Sweet and Spicy Slaw, Avocado Roses and Oven Roasted Cauliflower Flings, but let’s start with a little pick-me-up salad that will have you feeling fresh inside and out.

Shaved Cucumber and Fresh Herb Salad

This salad is super easy to make and you can get creative with leftover veggies you have in your fridge (or garden). All you really need is some shaved cucumber, fresh mint and basil, lime and some sesame oil.

I like to add cilantro, mango, bell pepper, carrots and chilies (depending on what’s in my fridge). The simpler the better! If you’re looking to make your own dressing, try taking a scoop of your favorite hummus (I use Bob Ali Curried Carrot and Ginger) with some sesame oil and spices.

Whisky Ginger Sesame Cauliflower Flings

These my friends, are for those days you want to eat something similar to a chicken wing, but without eating the chicken. Super easy on the budget and you can feed 4 for well under $10.

Pre-heat oven to 450 degrees. Use a non-stick pan and lightly grease.

Take your head of cauliflower and cut cauliflower in to your preferred bit size pieces. Make sure pieces are fully dry.

Combine 1/2 cup of your favorite plain nut milk with 3 tsp cornstarch, and a pinch of salt and pepper. stir so corn starch doesn’t clump.

In a separate bowl, pour about 1 cup of panko bread crumbs.

Using an assembly line, dip dry cauliflower pieces into milk mix until fully coated, and same with panko crumbs. remove any excess crumbs. Place on baking sheet.

Repeat until all cauliflower is used up.

Bake in over for 20 minutes. Remove and let sit slightly.

Whisky Ginger Sesame Sauce:

2 tbsp sesame oil

1 tbsp grated ginger

2 tbsp whisky

1 tbsp maple syrup

2 tbsp Nandos medium hot sauce

Whisk together sauce and pour over cauliflower flings. Garnish with toasted sesame seeds and chopped scallions.

Chips and Avocado.

Really it’s chips and guac, but when you make it look this pretty, I like to call it chips and avocado. Peel a perfectly ripe avocado and cut thin strips with a sharp knife. Gently spread the avocado into a line and fold into the shape of a rose. Voila! garnish with rock salt, crushed chilies and lime juice.

Pulled Jackfruit Sliders with a Sweet and Spicy Slaw

These were ridiculously easy to make! I used Scar Gluten Free Hamburger Buns, and Upton’s Natural BBQ Jackfruit. Simply heat jackfruit according to cooking instructions, slop on your slider bun, slather on some Bob Ali Curried Carrot and Ginger Hummus, and make a sweet and spicy slaw (julienne carrots, mango, cucumber, bell pepper, red cabbage tossed with sesame oil and dried chilies). This dish brought me back to my childhood days devouring the messiest of Sloppy Joe inspired sliders at summer camp. Definitely perfect for your tailgate parties, but also for family dinners.
