Jackfruit Tacos with Edible Flowers

Vegan Taco Tuesday!

I like to call these romantic tacos. Because I had tacos on my mind, but I also wanted a romantic dinner. And I wanted tacos. And these took less than 15 minutes to make.

In my fridge you will always find a fresh tub of microgreens and mango and pineapple salsa from Whole Foods. So knowing I had those (and avocados and lime because it’s a crime to run out) all I needed was some corn tortillas, radish (I used watermelon), mint (for the avocado mix), edible flowers and premade jackfruit (I used Upton’s Thai Curry).

That’s 9 items total to make this darlings!


Sautee Upton’s jackfruit in sauce pan for 7 mins, turning every 1-2 minutes

Warm tortillas in microwave for 30 seconds

Mash 1 avocado with 1 lime and about 1 tsp of finely chopped mint.

Scoop avocado mix on one side of tortilla

Layer with sliced radish

Layer with Whole Foods mango and pineapple salsa

Layer with Uptons jackfruit

Layer with Microgreens

Garnish with your favorite edible flowers (also available at Whole Foods)

Squeeze extra lime if needed.
