With Christmas, New Years, Sophie’s birthday, endless shopping, holiday parties and planning for 1 week in NYC next month.. December definitely gets busy. My sanity may or may not be running on large volumes of coffee this month, but hey darlings, today I’m here to remind us fellow #momlife members to treat ourselves too during this season of giving.
Doesn’t that sound ah-mazing! Well, I was actually worried about creating this recipe. Why? Because I have never cooked tofu in my life. I know, I know, I’ve been a Flexitarian since age 12, and somehow I have consumed and prepared endless amounts of protein that didn’t include tofu. Well darlings, I joined the tofu club and this my friends is an easy game changer.
Literally my mind just went in an ooey gooey nachos frenzy when a friend on Facebook told me it’s National Nacho Day. How did I not know this?! And then I reminded myself that I haven’t had nachos in basically a week and it was definitely overdue. Plus, nachos can be nutritional when you load them up with toppings rich in fiber and vitamins. So tonight darlings, skip that meal prep you planned and celebrate your love of nachos.
