
It’s Tuesday darlings! And that means TOSTADAS!
Last week I posted about making Roasted Cauliflower Tostadas and since I had some leftover tostadas, I wanted to show how easy it is to use them for a different kind of meal. Plus, it involves avocado two ways – so I just had to share a new favorite with you.
This week I bring Breakfast Tostadas. Breakfast is the most important meal of the day, so why not feed yourself something new and fun. Plus it’s packed with all kinds of green goodness to keep you energized throughout your busy day. Did I mention these only take 15 minutes from start to finish. Talk about a Breakfast of Champs!
Breakfast Tostadas
Multi colored Tostadas from Santa Rosa
Homemade guacamole (1 avocado, lime juice, minced shallots, minced lemongrass)
Fried Egg (I fried mine on a pre-heated cast iron on medium heat with a touch of avocado oil).
Organic Avocado
Organic Cherry Tomatoes
Organic Pea Shoots
Red Onion
Jalapeño
Crumbled Feta
Garnish with Lime & Cracked Pepper
