
Let’s Taco’ bout a Cinco De Mayo Party!
Darlings, I had so much fun collaborating with a few local ladies to create this vegetarian/vegan Cinco De Mayo Fiesta spread!
Supporting local small businesses is so important to me. I love to watch dreams turn into a success story, especially when I can assist in supporting their journey.
So when the opportunity came to create recipes and style Dee’s Nutty Cheeses, I knew I wanted to work with the talented Akane Kondo Photography (who captured my daughters Wild and Three birthday moments perfectly), and Corrine from Sprinkles + Streamers, a local momma who creates the perfect party decor and knows how to style for all kinds of events. Corrine styled this amazing shoot with the most gorgeous Mexican inspired decor.
It’s so easy and fun to throw together a Cinco De Mayo Spread. Elevated guacamole, fun tacos and a DIY nacho bar is really all you need – and of course the cutest sweet treats and a signature cocktail.
Below you will find a few of my Fiesta inspired recipes.
Let’s start with the Cinco De Mayo Signature Cocktail – Lemon Lavender Tequila Cocktails.
Lemon Lavender Tequila Cocktails
2 oz Silver Patron
1 oz Lemon Lavender Syrup
3 drops of Lavender Bitters
3 oz chilled soda (or sparkling water)
Squeeze of lime
Stir and enjoy! So simple, but so fancy your guests will love it.
Guacamole. Seriously what’s better than a creamy, chunky, perfectly ripe hass avocado. Add a little mint, cilantro and lime juice and you have the most simple yet elevated guac, focusing on the beauty on the avocado.
Mint and Cilantro Guacamole
2 Large Avocados
2 Tbsp finely chopped cilantro
2 Tbsp finely chopped mint
1 lime, juiced
In a large bowl, combine all ingredients and mash until desired texture.
Garnish with mint and serve with sliced watermelon radish as a healthier alternative. This is Keto friendly and loaded with all kinds of good for your body ingredients.
And then there were tacos. Delicious, vegan, healthy and filling tacos. These are super easy to make and the best part is you can prep them well in advance.
Roasted Purple Cauliflower, Romanesco and Walnut “Meat” Tacos
Ingredients (for 4 tacos)
1/2 Romanesco
1/2 Purple Cauliflower
2 Cups of Dee’s Nutty Cheeses Walnut Meat (which is similar to the Oh She Glows recipe)
1/2 cup Mint, Cilantro and Avocado Guacamole
8 Soft Taco Shells
1 Lime
Cooking Instructions for Romanesco and Purple Cauliflower
Pre-heat oven to 425 degrees Fahrenheit
Wash and cut Romanesco and Purple Cauliflower into bite sized florets. Toss with olive oil.
On a foil lined, greased sheet, evenly spread romanesco and cauliflower. Sprinkle with salt and pepper.
Bake for 20 minutes.
You can make this a day before, hour before or even fresh. If made in advance lightly reheat.
Taco Time
Combine mixture with walnut “meat” in a large bowl and lightly mix together.
Use two soft taco shells per taco. I like to use two as I find it’s easier to eat, and holds better.
Layer the inside taco with Mint and Cilantro Guacamole posted above. About 2 tbsp per taco.
Add your romanesco, cauliflower and walnut meat mix to fill. Squeeze a bit of fresh lime, and garnish with vegan shredded cheese and salt.
These are so easy darlings! And 1 taco is so filling. You’re guests will have a new meaning of vegan eating.
Then there was Dee’s Nutty Cheeses Vegan Queso. I can’t even explain how AH-MAZING this is. Butternut squash, cashews, the perfect spice blend and a whole lotta love went into this. And it’s magical. If you are local to the Vancouver area and surrounding area, you need this in your life.
I love a DIY Taco Bar. It allows guests to add as little or as much as they want to appeal to their taste buds and spice levels. Plus it encourages creativity and the possibility to try something new.
Me; I like extra everything. Extra pickled peppers, extra guacamole, and obviously as much queso as I can load on those tortillas.
I like to make sure I offer at least 2-3 salsas, one sweet and one spicy. Black beans, pickled jalapenos, chopped cilantro and shredded vegan cheeses are great options for garnish.
And then there is dessert. Glorious glorious dessert. Corrine made this super easy naked cake, garnished with a whole lot of Cinco De Mayo love.
And the cookies. Oh the cookies! Diana from Beary Sweet Cookies brought my llamas and cactus cookies vision to life.
And then we feasted. We drank, we laughed, we smiled, shared stories and feasted on the tastiest Cinco De Mayo worthy spread.
